Hummus Buddha Bowls

Satisfying, nourishing, and full of flavor!

Buddha Bowl – we hear a lot about them, but what are they? The Urban Dictionary defines them this way:

(n). a bowl which is packed so full that it has a rounded “belly” appearance on the top much like the belly of a buddha.

They can be made with veggies that you have on hand, leftovers really! The ones we made are primarily veggies, but they’re also fabulous with the addition of grains like quinoa, and rice. Here’s a list of items to get you started –

Sweet potatoes, cubed
Corn niblets
Cauliflower – purple or conventional
Brussels sprouts
Tomatoes, diced
Peas
Pomegranate seeds
Squash
Kale

Prepare your veggies with your favorite method. We like to take a baking sheet, coat it with olive oil, and bake a few veggies at a time – such as cauliflower steaks (cut lengthwise), squash, and sweet potatoes. Brussels sprouts and kale and be quick-steamed on the stovetop. Assemble your ingredients into single-serving bowls. Plop into the center of your bowl, a scoop of any flavor of Lilly’s Hummus, using it as a flavorful dressing to tie your veggie flavors together. Our roasted garlic hummus, and kalamata olive are excellent here.
