What makes Lilly’s different? We decided long ago, to kettle-cook organic chickpeas for a fresher, nutritious, and better tasting hummus. They’re first soaked overnight, then cooked in batches. Hummus is produced fresh weekly in our Portland, Oregon facility.

Fresh red bell peppers, tomatoes, and jalapeño peppers are slow roasted over hazelnut-shell briquettes. The effect is similar to roasting with a dense hardwood or fruitwood, only our briquettes are made from an entirely renewable resource – the hazelnut shell. Hazelnut-shell briquettes impart a rich, savory roast-y, smokiness unique to the Northwest. No nut meats are used, and they’re petroleum free.

Producing fresh weekly in our Portland, Oregon facility, Lilly’s is located on an 11.5 acre parcel where we host a wide variety of native animal and bird species.  Our site fully recycles and composts waste, and we are fortunate to be a part of community with a long history of supporting this practice. Reduction of pre-packaged ingredients through cooking our own beans, and roasting fresh vegetables in-house is a part of our mission of environmental sustainability.
